The most likely cause is your 12V supply. Even on 120V AC, a Norcold absorption fridge needs a steady 12V DC from the batteries or converter to run its controls. If the battery voltage drops overnight (or the battery is switched off and solar is carrying the load during the day), the fridge stops cooling at night. Check your 12V at the fridge in the early morning when it's warm. If the 12V is good, look at the thermistor and the AC heater next.
