You've done a lot of good testing. When the fridge only reached 15°F freezer and 55°F fridge after two days with the thermistor unplugged (so it was cooling nonstop), the cooling system isn't moving enough heat, and that points more toward the cooling unit than the board. The evaporator plate not sitting flat is a real concern. The evaporator needs full contact with the inside of the box (with thermal mastic) to cool the fridge section, so a warped plate could explain it. I'd take that up with the cooling unit supplier. On the board: a board that keeps sparking after the flame is lit isn't sensing the flame, which is often an electrode position or ground issue rather than the board itself.
