Your thermistor readings look normal. If the flame lights strong but shuts off every minute, the board is losing the flame signal. Check the spark/sense electrode position and gap, clean it, and check its wire and ground. A heat-damaged or misaligned electrode is common after burner cleaning. The Spark Sense Electrode 639198 for the N3141 has a 2-3 week lead time. See our not staying lit on gas article. The N3141 is discontinued, and Norcold's current 3-way model is the Norcold N4150.
