Norcold N6 models don't run a defrost cycle, so I'd figure out whether the heat source is actually on when it quits cooling.
Next time it stops, check the burner (on gas) or feel the boiler area near the heater (on electric). If the heat is on but the fridge isn't cooling, that points to the cooling unit starting to fail. Units that are on their way out often cool off and on like this. If the heat is off even though the fridge is calling for cooling, then it's the control board.
Since it happens in every mode with no codes, my money is on the cooling unit over the board. Our tech service can walk through it with you step by step.
