When a DE0061 cools fine for days and then quits for a day, the cooling side is usually OK. Something is intermittently cutting power to the compressor, like the thermostat, a loose connection, or the power module. The thermostat is a reasonable first step, but I can't confirm it's the fix from here. If you end up replacing the fridge, the Norcold N2175 is the recommended replacement for the DE0061.
