On the N641/N841/N1095, the thermistor plugs in at the light bracket, and its reading goes to the front (optical) board, which decides when to cool. If the thermistor tests good and is clipped to the right fin but the fridge never shuts off, the optical board is the likely culprit. For N641/N841 serials above 9044284, it's the 628976/637780 (discontinued).
